Eddie Merlot’s, Downtown, is the 10th location for the Indiana-based company. The restaurant offers hand-cut prime beef, seafood, and an extensive collection of wines. Named after President Bill Humphries’s business acquaintance, Ed, who was known to enjoy a glass of Merlot and a great steak, the locale features steak favorites, like natural filet mignon, New York strip, prime bone-in ribeye, and Wagyu Tomahawk ribeye. The Parmesan truffle fries, Brussels sprouts, and lobster macaroni and cheese are must-have sides. Says General Manager Larry Stakes, “The restaurant is absolutely gorgeous and the views are fantastic.”
