Big Burrito Restaurant group President Chef Bill Fuller announced today that Alta Via is expected to open in March 2019, bringing modern Italian cuisine to the Fox Chapel Road, in the location previously occupied by Donato’s. Alta Via will offer a cuisine inspired by the active lifestyle of both California wine country and the lively mountain towns of the Italian Alps. The space will be both comfortable and intimate.

This concept is a passion project for Chef Bill Fuller. Alta Via presents an opportunity for him to serve great pasta, seasonal vegetables, and the warm feelings associated with wood hearth cooking. Big Burrito has successfully embraced Caribbean cuisine with Kaya, Mediterranean with Casbah, Asian-fusion with Soba, Tex-Mex with Mad Mex, and now will offer the city their take on traditional Italian.

The menu itself will be built around handmade pasta. In addition to vegetable-centric recipes, the food will also be incorporating the chef’s love for seafood. All pastas will be made daily in the kitchen.

The dining room will seat approximately 90 guests. As is tradition at big Burrito restaurants, there will also be a prominent bar space. The large horseshoe bar that is planned for Alta Via will seat approximately 40. Both the bar and dining room will offer the full menu. The drinks will focus on classic cocktails, an Italian and American wine list, as well as an array of beers from regional brewers.

Chef Ben Sloan of Kaya and Eleven will take on the role of Executive Chef. Jennifer Johnson of Eleven will move to the position of General Manager. Currently the plan is to open mid-March2 019 and service dinner every night of the week. Brunch and lunch are in the gameplan, but to be introduced later in the Spring of 2019.
